Last week I finally found rhubarb at the store and turned it into a delicious crumb cake. There’s some left over, and if it’s still in good condition this afternoon, I’ll make some sweet bread or maybe save it for pork with sweet onion-rhubarb sauce. Have you ever frozen rhubarb? I tried it once and wasn’t too happy with the results, so maybe you have tips.

Meal plan 05.03.13

Can you believe it’s May already? We’re heading fast toward a fun-filled summer packed with plans. Today it even hit 90 degrees. I love this time of year! This week’s meals include more grilling (as long as we refill our propane), and a summery chilled pasta salad.

  • Friday: Padres game — our tickets came with unlimited hot dogs!
  • Saturday: Mom’s pasta salad (save leftovers for weekday lunches)
  • Sunday: Breakfast: Chai spiced banana bread. Dinner: Thai fried quinoa
  • Monday: Leftovers (getting home late)
  • Tuesday: Grilled chicken with mango salsa
  • Wednesday: Burgers with roasted or grilled sweet potato wedges
  • Thursday: Bar trivia with friends

Recently I’m regretting how rarely I make it to the farmers market. Do you have any good strategies for getting out and about on weekend mornings?

Meal plan 04.12.13

As you can see, I haven’t planned meals in a while. After we hosted several houseguests in a row I fell off the planning wagon. But as usual, it’s been more hectic and less efficient without a plan, so today I took the time to make one.

  • Friday: Out and about
  • Saturday: Breakfast: sour cream pancakes. Dinner: grill burgers & dogs
  • Sunday: My mom’s slow cooker chicken tortilla soup
  • Make-ahead lunch: Green wraps (with homemade hummus if I get ambitious)
  • Monday: Leftovers (getting home late)
  • Tuesday: Green pesto plate
  • Wednesday: Leftovers (getting home late)
  • Thursday: Pork chops and roasted broccoli

This month I cooked lentils for the first time. They were good! My friend recommended a dal recipe with rhubarb and I really want to try it, but haven’t found any at the store yet. I’m also craving rhubarb buttermilk quickbread. Is it in season where you are?

Due to a fun and busy weekend I didn’t post my menu plan on Friday as usual, so this one covers a few days less than normal.

I’m most intrigued by the slow cooker ribs. Can they really be good compared to restaurants that have big smokers and fancy equipment? We shall see!

Meal plan 02.08.13

That broiled grapefruit from last week was really delicious! The sweet warm fruit with tart creamy yogurt and crunchy granola was a perfect combination. Like awkward little kids, though, we both had trouble eating the grapefruit. As in, separating the fruit bits from the membranes. Silly, eh? I will make it again, but section it first.

Dan’s traveling for business this coming week so I get to make some things I love that he’s not as fond of. Small consolation though — I miss him during these trips. Sigh… Anyway, here’s this week’s meal plan:

  • Friday: Leftover chicken burrito with pineapple avocado salsa
  • Saturday: Out and about
  • Sunday: My parents’ stovetop BBQ chicken with new potatoes
  • Monday: I’m invited as a friend’s plus-one to a Yelp Elite event!
  • Tuesday: Pasta with roasted asparagus tomato caper sauce
  • Wednesday: Leftovers (getting home late)
  • Thursday: Enchiladas

Happy Valentine’s week by the way! We don’t usually celebrate it so I’m not especially sad we won’t be together for the holiday. But maybe I’ll use it as an excuse to bake something sweet just for me. That’s fair, right?

Meal plan 02.01.13

Last week I didn’t really cook much. We went out to eat a few times, and Dan caught that cold/flu thing everyone’s getting (so it’s not like he could taste good cooking anyway — poor guy). Last night we had grilled cheese and tomato soup. Knock on wood that I stay healthy.

Next Monday I’m on jury duty for the first time. Is it weird to pack your own lunch? It would be nice if I don’t get chosen for a trial. But if I do, at least I’ll have shorter hours than normal work, and I’ll get to walk to the courthouse rather than drive my commute. Should still have time to cook at night.

My coworker just dropped by and raved about a beer cheese dip she made this week. Maybe I should bring that to the Superbowl party instead — what would you bring? Too many good options!

Meal plan 01.18.13

Last week I had mixed results with cooking. The birthday cake didn’t turn out well — bland and dry. Next time I’ll stick to box mixes for yellow cake. But the frosting was rich, almost moussey, which made it all worth eating. We had leftover cake with coffee and eggs at breakfast. Because we’re adults and we get to decide what breakfast food means.

On the upside, I made chickpea salad wraps and brought them to lunch a few times. They were delicious and now I’m inspired to make ahead some kind of salad or wrap filling each week for easy grab-and-go lunches. I’m no good at making lunches in the mornings.
